Aji Latin American restaurant in Boulder doesn’t advertise it, but they do have a full, special menu with dishes for those who need to eat gluten free, or have other special dietary needs.

Many of their regular dishes are, by nature, also gluten free, including their ceviche, their peanut and plantain encrusted yellowfin tuna, and their pork tenderloin, sour orange & garlic mojo, black beans, and chayote squash.

But most importantly, they understand the need for these to be truly gluten free, prepared in separate vessels.
